St-Simon
Saint-Simon bay has long been appreciated for the quality of its oysters. In his famous text, Senator Pascal Poirier held these oysters in the highest esteem, dubbing them the ‘truffles of the sea’. That was in 1884! Saint-Simon Bay, with its cold and productive waters, produces an oyster which is as complex and dynamic as its environment.
We now grow St-Simon oysters using modern methods with care and passion. To supplement our production, we also support local growers who share our values.
St-Simon oysters are available year-round in two formats:
- Choice: 3,0 - 3,5 inches (7.6 to 8.7 cm)
- Cocktail: 2,5 - 3,0 inches (6.4 to 7.6 cm)

Bay Scallops
Our hatchery allows us to expand the range of species that can be produced in our waters, including the Bay Scallop, a native of the Eastern Seaboard. Bay Scallops are available in the Fall, and are highly sought after by those ‘in the know’. We also supply bay scallop seed to growers wanting to try out this charismatic, if temperamental, mollusk.
Quality Control
Bringing premium-quality oysters to market is our absolute priority. Our clients can be assured that they have access to a reliable and safe supply of oysters both through the federal government’s rigourous environmental monitoring as well as our in-house expertise in managing risk through product testing and a strict attention to temperature control from the times oysters leave the water to when they leave our packing plant. All of our oysters are washed and individually inspected and packed, cup-side down to maximize shelf life.
Shellfish Seed
Our passion for innovation naturally led us to the development of a shellfish hatchery, which gives us a reliable and high-quality seed supply. Managed by Martin, we operate the largest commercial hatchery in Eastern Canada, supplying not only our own farm but other growers throughout the region.
